Aji Amarillo Chile

What is it?

This bright yellow-orange chile is considered the quintessential chile of the Incas and that of modern day Peru as well. It is seen as one of the most important ingredients of Peruvian cuisine and is used in many of their nationally recognized dishes. The chile has a touch of heat, comparable to a serrano chile, but is more recognized for its tangy aroma and flavor that is almost berry like at times. Excellent to re-hydrate or grind before use. If you are experimenting with South American food and in particular the cuisine of Peru, this chile is a must. For now the chile will be sold whole and in the future I may present a ground form. The massive demand on this chile has made it difficult to procure so only time will tell if I can grab enough of it to make grinding a regular occurrence.
